Impossible Zucchini Pie
Grab some zucchini and make this delicious pie, easy and no crust needed.
- 1 pound mild Italian ground sausage
- 1 small onion chopped, or 2 teaspoons onion powder
- 1 clove of minced garlic
- 1 teaspoon Italian seasoning
- 1 tablespoon minced fresh parsley or 1 teaspoon of dried
- 3 cups of thinly sliced zucchini
- 3 large eggs
- 1 cup of shredded or grated Parmesan cheese
- 1 cup of Bisquick baking mix
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup of oil canola, vegetable, or olive

Combine Italian sausage, onion, minced garlic, Italian seasoning and parsley in a skillet on top of the stove. Brown and drain well.

Combine sliced zucchini, eggs, cheese, baking mix, salt, pepper and oil in a bowl and mix together.

Add cooked and drained sausage and continue mixing until all ingredients are wet.

Pour into a 9 inch deep dish pie plate. Bake in a preheated 350 degree oven for 30 to 35 minutes until begins to brown on top.

Makes 6 to 8 servings.
Can make this pie without the meat or could use ground beef or ground turkey in the recipe. Could change the cheese to your preference.
